Turkey & Courgette Koftas
These koftas are super healthy using lean turkey meat and are quick to make - plus kids devour them! They are also great for batch cooking and can be frozen either as raw or cooked.
Ingredients
500g turkey mince
1 large courgette, with the skin on, grated
1 small onion, finely diced
1 large egg
1 large garlic clove, crushed (omit if using Tandoori Masala)
1 tsp dried mint
2 tsp Bhuna (or any other Spice Pots blends)
1 tsp salt
Vegetable oil, for frying
Mint & Corinader Raita, to serve
1. Preheat oven to 200C.
2. Combine all the ingredients, using your hands to mix everything together really well. Shape into palm sized, small burgers. You should be able to make about 18-20 koftas.
3. Heat the oil in a pan over a medium-high heat. Cook the koftas in batches, a few minutes on each side, until they have browned. Remove them to a tray, lined with foil, when they are done.
4. Pop the tray in the oven for about 8-10 minutes, until the koftas are cooked through, but not dry. Serve warm with raita.
