Salad Dressing Recipe

A simple salad dressing is a must have in your tool kit of recipes.  This takes minutes to prepare and it's delicious. It has a thick consistency and really coats the leaves.  

Ingredients

Dijon Mustard: 2 teaspoons
Balsamic Vinegar: 1 tablespoon
Garlic Clove: whole and peeled
Extra Virgin Olive Oil: 3 tablespoons
Salt and Pepper: to taste
Sugar, a pinch (optional)

Use an old jam jar or similar.  Mix the mustard and balsamic vinegar briskly until it comes together.  Add the olive oil, salt, pepper and sugar if using.  Mix again until it comes to a thick consistency.  Taste and adjust - you may need to add a little more oil, more salt etc  Pop in the garlic clove and leave to sit for a while.   This keeps really well in the fridge for a couple of weeks.

Top Tips:

  • Take a big batch with you on holiday so your salads are ready to go
  • As an alternative to a mayonnaise based potato salad, pour this salad dressing over hot cooked potatoes.  Add mint, chives and even some chopped bacon for a sensational no-mayo potato salad.  This is best left to stand at room temperature for a couple of hours to let the flavours mingle and mix just before serving.
