Spiced Fruit Loaf Recipe
A delicious tea time treat our Spiced Fruit Loaf is lovely a twist on the traditional fruitcake loaf recipe. This recipe combines a lovely sweet spice with juicy full flavoured dried fruit and it is easy to prepare! It freezes well too. A great one to feed a house full at Christmas time. Decorate with some sprigs of holly!
Ingredients:
225g sugar
250ml water
110g margarine
340g dried fruit mixture (you can also add some nuts if desired)
260g self-raising flour
1 teaspoon baking soda
Pinch of salt
4 teaspoons Sweet Spice Blend 2 eggs Icing sugar for decoration
Method:
- Put water, margarine, dried fruit and the sugar into a pan and bring to the boil. Simmer for 5 minutes. Allow to cool slightly.
- Add the eggs and other ingredients and mix well.
- Place mixture in a lined or greased 2lb loaf tin (or divide mixture between 2 lined 1lb loaf tins). Bake in pre-heated oven for 45 minutes at 180°C / 160°C Fan.
- Using a sieve, sprinkle a spoon of icing sugar over the loaf
