Grilled Courgette
A variety of courgette recipes are extremely useful if you grow courgettes in your garden or allotment or want to make use of inexpensive, seasonal vegetables in July and August. One courgette plant can produce a huge amount over the course of a few weeks and can be grown in a pot or small space in a garden.
This easy grilled courgette recipe can be cooked on the BBQ or on a griddle pan on the hob. Serve alongside some grilled paneer or halloumi or simply as a side dish to grilled chicken or other barbecued chicken.
Serves 4
Ready in under 30 minutes
3 courgettes, trimmed and halved lengthways
2 tsps vegetable oil
1 tsp curry powder (optional)
Salt, to taste
- Score a criss-cross pattern on the cut side of the courgettes.
- Mix the oil and salt in a tiny bowl and add the curry powder if using. Brush the courgettes (over the criss cross pattern) with the oil mixture.
- Barbecue the courgette halves for around 15-20 minutes, turning halfway, until tender.
