Massaman Curry Recipe

This Chicken Massaman Curry is delicious and can be prepped and in the oven in minutes with the Spice Girl Massaman Curry Kit.  We used potatoes and carrots. As we used chicken thighs, we cut the vegetables into big chunks so that they cook at the same rate as the chicken.  If you want to use chicken breasts, these will cook much more quickly and therefore you should cut the vegetables into small pieces, to match the cooking rate of the chicken breasts. 

Serves 4-6

Ingredients:

Oil for frying
600g-900g Skinless, boneless chicken thighs, cut in half
300g -500g carrots and potatoes, cut into large chunks
400ml coconut milk
Spice Girl Thai Massaman Curry Kit
Coriander, for garnish

 

Method:

  1. Heat the oven to 170 fan
  2. Heat a pan with a little oil. When the oil is hot, tip in the dry spice blend and fry for a minute or so.  (Add some fresh chillies here if you would like this curry to be hotter.)
  3. Add the chicken and vegetable pieces and mix so everything is coated in the spices. Then add the Massaman paste and mix again.
  4. Add the coconut milk and stir well, bringing to a simmer.
  5. Put the lid on a put into the oven for 45-60 mins.  The chicken should be very tender.  You may want to remove the lid for the last 20 minutes or so if the sauce needs to be reduced.
  6. Add coriander (and you could add a handful of spinach here too).

Recipe Notes:

If you are using chicken breasts, the cooking time will be reduced and therefore the sauce won't have as long to reduce so you may want to cook without the lid.
