Spiced Cous Cous
This is such an easy side dish and is delicious with roasted vegetables and / or grilled meat or fish. Or for a summer version, skip the spices and add in tons of fresh chopped herbs. This will make a lovely side dish for a BBQ or summer meal. This easy recipe literally takes about 10 minutes from start to finish so a great addition to your family meals when you are in a hurry. Only 4 ingredients! Vegan, vegetarian, and dairy free.

Ingredients
1 tablespoon oil
350ml Vegetable or Chicken stock
225g Cous Cous
2-3 teaspoons, Spice Pots, any blend
Method
- Heat the oil over a medium heat, add spices (I used 2 teaspoons as it was a family dish but add more for more heat). Be careful not to burn the spices - just wait a few seconds until you can smell the aroma of the spices then add the stock.
- Bring to the boil, tip in the cous cous and give it all a quick stir. Take off the heat and leave for 5 minutes. Fluff up with a fork, add fresh herbs if you like then serve!
I roasted some baby carrots, sprouts and parsnips in a little oil and balsamic vinegar and served with lamb chops.
