Our top five recipes to cook once... eat twice!
Over 10 years ago, a writer for the New York Times pondered an idea: "If I tried to sell you a new appliance that could help you save money, reduce food waste and get meals on the table faster, the only thing you’d ask would be “How much?”
His answer? This magical new appliance would cost you nothing - that's right - zero pounds. Because you already own it... and it's probably grossly underutilised, iced up so it's working at half it's capacity and crammed with iced lollies that have been there too long to remember. Yep, it's your freezer.
So let the Spice Pots team help you with some ideas for easy batch cooking. We would never cook one of our meals just for two, as many of them are easily scaled up to a bigger version, allowing you to portion the leftovers into easy freezer meals.
So here are some of our tried and tested recipes that work really well as batch meals to freeze, and also defrost & reheat perfectly for a quick curry on another day.
Satay sauce - for meat or vegetable stir-frys, and also delicious as a dip with crudites.
Simple Marinade - a definite winner for doubling and freezing later. It also works well for meals such as, Goan Chicken Burgers/Drumsticks, where you can marinade the meat and then store as chicken freezer meals - ready to defrost and pop in the oven
Daal - so tasty and can be adapted to use any of our curry blends. Defrost from the freezer and then reheat gently with a splash of stock or water
Lamb Bhuna - this is one that actually improves with time! Let it sit in the freezer with all the flavours melding together and enjoy it at a later date
Goan Beef Curry - a slow cooked curry which is a real crowd-pleaser and is a favourite batch cook meals
