Smooth Chicken Curry
This is a very simple, fussy kid friendly, chicken curry recipe. A great curry for a party! We used our Korma Spice Pot for a mild crowd pleaser but you could of course substitute with one of our other blends. As the sauce has been liquidised, you can add as many veggies as you like and they will never know!
There is also an option to make the sauce in advance then complete the recipe (from step 7). If you are cooking curry for a party, then you could freeze the sauce well in advance and just finish off the day before the party.
Serves 6-8
Ingredients:
2 onions, finely chopped1 inch piece of ginger, grated
5 cloves of garlic, crushed
Vegetables - carrots, celery, pepper
400g tin of tomatoes
5 teaspoons of our Korma Spice Blend
5 tablespoons of natural yoghurt (or use cream, sour cream or crème fraiche)
1kg chicken breasts, whole
Salt, to taste
Coriander, to garnish
- Heat the oil and cook the onions until soft and transparent - around 8 minutes.
- Add the ginger and garlic and cook for a couple of minutes.
- Add the vegetables and a little salt, put the lid on, turn down low and sweat the vegetables for 5 minutes.
- Add the tomatoes and reduce down until its a thick, rich paste.
- Add the Korma spice blend. Cook for a minute or two.
- Take off the heat and whizz up the mixture with a hand blender or blender until the sauce is as smooth as you like.
- Return to the pan and add the yoghurt (or alternatives). Mix, then add the whole, raw chicken breasts.
- Mix it all up to make sure the chicken breasts are all covered and pop into the over on 180 fan.
- Cook for around 50-60 minutes until the chicken is very soft and easy to pull apart. The breasts should be cooked through and soft - still whole but easily pulled apart with a fork.
- Check for seasoning and more salt if necesarry
- Garnish with coriander and it's ready to serve!
We've had first hand experience of fussy kids with clean plates! And they even mopped up the sauce with our easy flat breads.
